WATSON is a flagship EU proposal that aims to develop a set of systems that provide greater transparency throughout a food product’s journey, raise consumer awareness of food safety and value, promote healthier lifestyles, and create a sustainable food ecosystem. The technologies will be demonstrated in six different use cases in a number of key food supply chains covering important commodity groups in the European food system: Wine, Olive Oil, Honey, Meat, Fish, Cereals, and Dairy. At the 54th edition of Agriumbria, the largest national fair for agriculture, livestock, and food, the four main partners of the olive oil use case, BioCoS, IBBR-CNR, APROL UMBRIA, and MITERA GbmH, had the opportunity to present the project WATSON and showcase olive oil traceability to a wide range of supply chain stakeholders, including olive growers, EVOO producers, retailers, consumers, etc.
